Healthy Egg & Vegetable Breakfast

Ingredients

  • 2 large sweet potatoes
  • 2 large Irish potatoes
  • 1-3 large eggs
  • 6 bacon strips, cut into 1-2inch pieces
  • 1 medium onion, chopped
  • 1 bell pepper, chopped
  • 1/2 medium zucchini, chopped
  • 1 Tbsp of Bailan Spice Vegetable Seasoning
  • 1/2 Tsp of powder garlic
  • 2 Tbsp of vegetable oil
  • 1/4 Tsp of paprika (optional)
  • Salt and pepper to taste

How To

  • Peel, wash, dice, and boil the potatoes for 5-7mins, untill almost ready
  • Cook bacon and set aside (Tip: Boil bacon with water for 5mins and drain to reduce sodium)
  • Drain water from potatoes and add oil, onions, zucchini, bell pepper, Vegetable Seasoning, paprika, salt and pepper, and saute till cooked
  • Fry egg(s) with a dash of salt and papper
  • Add bacon and egg(s) to vegetables and serve hot
